  1. I just put xv olive oil in bowl w/fresh garlic, sea salt, & parsley and grilled it on my JF grill with some onions and ate it with some chat one squash that I boiled and seasoned. Very good combination and very filling.

  2. nice nutritional info on the eggplants.. I love eggplants. In order to use less oil, I cut and marinate 1 large eggplant pieces in 2 tbsp vinegar and 2 tbsp olive oil with sea salt for 30 minutes. Then its very easy to bake and tastes delicious with some herb seasoning and paprika.

  4. I think my favorite food made with eggplant is probably baba ganoush. Thanks for clearing up what the deal is with eggplant. I read about it being a nightshade, which made me wonder if I should be eating it or not, but now I think that having it sometimes is probably a perfectly good part of my healthy diet.

  5. My favourite eggplant dish is "parmigiana", but I grill the e eggplant instead of frying it. Make sure to add lots of fresh basil to the tomato sauce. You can also try to replace cheese with tofu and it's always interesting to add pine nuts, raisins and grilled sliced almonds 🙂
