Cauliflower tabbouleh

Rice made from cauliflower is not only prepared faster, but it’s healthier too. It’s delicious as a side dish or as its own meal!

Ingredients:
250gm cauliflower
1-2 tomatoes
2 cucumbers
3 tbsp lemon juice
Salt and pepper to taste
Herbs to taste
Parsley

Method:
1.Roughly chop the cauliflower, tomato & cucumber into small pieces.
2.Place the vegetables and the parsley in a food processor and grate finely.
3.Put the cauliflower mix in a pan with the lime juice and season with salt & pepper.
4.Lightly cook for 5 minutes and season with the herbs.
5.Enjoy your meal!
